Kaju Apple Recipe | Make Kaju Katli Apples at home

History of Kaju Katli?

Let me start by saying that my Kaju Apple Recipe is just a more creative presentation of Kaju Katli. Kaju Katli is one of the most common sweets found in almost every home around Diwali. Do you know why kaju burfi is associated with the festival of Diwali ? The story behind it goes like this. Emperor Jehangir arrested many Sikh gurus and Hindu kings and held them in prison for many years. Out of those prisoners one of them was Guru Hargobind, son of Guru Arjan Dev who was also arrested and tortured by Emperor Jehangir.

In 1611-1612, the Emperor had a change of heart and decided to release Guru Hargobind and 52 other kings. On that day one of the chefs in the Emperor’s kitchen, who was inspired by Guru Hargobind, made a special sweet of cashews, milk and dry fruits like Kaju Burfi. This day is celebrated as ‘Bandi Chhor Diwas’ by Sikhs all across the country! Incidentally, it was Diwali on that day, therefore Kaju Katli became associated with Diwali as well.

Why am I making Kaju Apple Recipe now?

I am not preparing this sweet for the festival of Diwali as it’s still a few months away, but I’m a big follower of Lord Krishna and I wanted to offer something unique to him on festival of Janmashtami! So I decided to make a modified version of Kaju Burfi, which looks like Apples. Kids like the Kaju apple more than Kaju katli because of it’s shape and color. Since we’re celebrating the birth of Krishna, what could be better to offer him as prasad?

I have prepared almost all types of sweets at my home and the tastiest one Kaju Burfi/Kaju Apples is the simplest to make as well. Generally this sweet is prepared with milk or condensed milk but which makes it heavy and calorie rich so I decided to make it only with cashews and sugar syrup. Here goes the recipe for Kaju apples.

Kaju Katli or Kaju Barfi is made with Cashews and sugar syrup. It is probably the most gifted Indian sweet during the festival of Diwali. Kaju apple is just a different presentation of the same delicious recipe.

They also super easy to make at home.

Ingredients

  • Cashew Nuts (Kaju) - 1 bowl
  • Sugar - ¾ bowl
  • Water - ½ bowl
  • Ghee/ Clarified Butter - 2 tsp
  • Cardamom Powder - ½ tsp

For Decoration

  • Cloves - 12-15
  • Food Colors - Orange and Red
  • Pistachio - 10 (To be sliced in shape of leaf)

Instructions

  1. Take ¼ cup of cashew/kaju and grind it in a mixer for maximum 5 -6 seconds. Strain the fine powder with the help of a steel strainer so that the fine cashew powder can be separated. The remaining big pieces can be grinded again with the next lot. Repeat the process for the remaining cashews too. ground cashews - kaju apple recipe
  2. Take a pan preferably non -stick one, and add ½ bowl of water to it. Add ¾ bowl of sugar to the hot water. Allow it to boil and sugar to get dissolved completely in water. sugar syrup - kaju apple recipe
  3. After sugar gets dissolved in it, cook the sugar syrup for 2-3 minutes till it becomes a little sticky.
  4. Now add the fine cashew powder to this sugar syrup and cook it for approximately 7 -10 minutes. You have to cook it till the point that cashew sugar paste takes the shape of a dough. thick kaju paste - kaju apple recipe
  5. Add 2 tsp of ghee at this point and mix it well to make a dough batter. Take this mixture in a plate and allow it to cool down for 5 -7 minutes. 
  6. At this stage, you can make kaju katli, kaju kalash, kaju apples or kaju rolls too depending on your creativity and preference. For Kaju Apples, just take a small portion of cashew dough and give it a round shape, press it slightly from top and bottom to make it look like an apple. kaju dough balls - kaju apple recipe
  7. Put one clove on the top of it and paint the orange and red shades of food colors on your Kaju Apples.

Notes

  • Be very careful when you are grinding the cashews as over grinding will make it sticky as cashew nut butter will start coming out and you will not get the smooth fine powder which is the main ingredient of this recipe
  • I missed using the pistachio in my preparation, but you can add them with the cloves to make leaves in the apple stem 🙂
